Freeze Dried foods...A fad or fresh shelf-stable alternative?

Why choose freeze-dried foods over dehydrated or canned? For me the answer is simple...Freeze-dried keeps all of the flavor and preserves food when stored properly with a very long shelf life and a delicious final product.
